On this first day of December, a friend and I met to make some Christmas treats to gift to friends. We made two batches of Yotam Ottolenghi’s Brunsli Chocolate Cookies. These gluten and dairy-free treats are so simple to make and delicious to eat that we recommend trying them this Christmas.
It is made using almond meal and has orange rind it it for that delightful citrus taste (but as I write this I realise I had grated the whole orange and put all the rind in…oh well it was so delicious). Brunsli cookies come from Switzerland but Ottolenghi version uses Chinese 5-spice rather than the traditional cinnamon and cloves. I couldn’t find Chinese 5-spice in my local supermarket but we found them in kitchen stores and whole food stores.
The recipe is so simple to make and I think I’ll definitely try making them with my niece and nephews this summer. You mix all the ingredients together, put it in the fridge for an hour before popping them in the oven.
