First Beetroot Harvest

This week I harvested some beetoot and made a beautiful Beetroot and Carrot Salad which complemented some Kangaroo steak for a quick and easy meal. The weather is definitely warming up so it will be nice to do some more salads.

The beetroot took a little longer to grow then we expected and we learned a good lesson about growing beetroot in the process. Back in March we planted the seeds in our vegepod and sat back and waited for them to be ready for harvest in about 10-12 weeks. June came and the beetroots were crowded in our vegepod. Little did I realise that I needed to thin them out until I saw this Gardening Australia clip on beetroot a month later.

With the beautiful beetroots I picked, I made this Beetroot and Carrot Salad I found on Kathy Tsaples instagram page. It’s fairly simple – grated beetroot and carrot, tossed with some parsley and beetroot leaves and dressed with a lemon and olive oil dressing. It was delicious and fresh and most of all straight from our garden! I’m looking forward to harvesting more beetroot and making more beetroot recipes. I’ve been compiling a list of recipes that I want to make: warm beetroot and barley salad, borscht, red velvet cupcakes, beetroot hummus, beetroot pickle and more.
