Looking for some new recipes to cook during COVID-19 pandemic? On Monday when I went to the shops, there was virtually no flour, pasta and tins. But I also couldn’t buy other items like yeast, bi-carb soda or red lentils which were on my shopping list. I’m sharing this Spinach and Mushroom Quiche from Diana Lampe which has a short crust pastry (if you have only plain flour in your cupboard) and its vegetarian which is good when there’s a shortage of meat. It also has a bunch of spinach and mushrooms which make it healthy. I served it with steamed sweet potato and brocollini (I love eating potato at this time).
